Chinese Noodle Seed Salad

Ingredients:
1 package of shredded slaw cabbage mix, (pound pkg) found in the produce section near prepackaged salads.
 
1 Small package Sliced Almonds, about a cup or so.
 
1 cup sunflower seeds
 
2 packages of dried  Ramen Noodle Beef flavored Soup
 
2 bunches of scallion onions
 
1 Tbl. spoon soy sauce, optional.
 
1/2 cup oil (I use olive oil)
 
1/2 cup red wine vinegar
 
1/2 cup sugar

Note:

All of the seeds and nuts in this recipe can be added more or less to your liking. You can also include Soy nuts in place of the sunflower seeds or keep both.
A sprinkling of Sesame seeds are a nice touch.
 
Preparation:
Almonds are browned in a fry pan, no oil, cook until heated and toasted looking.
Crush noodles and place into a large mixing bowl, keep the seasoning packs separate.
Add cabbage salad, sunflower seeds, almonds and cut up scallions.
 
In a separate bowl mix vinegar, sugar, oil, soy sauce and the 2 seasoning packages from the soup mix. Stir well and pour over salad. Mix together until well covered with the sauce and refrigerate.
